KITCHEN CATASTROPHE #39: THAI CHICKEN SOUP
Tom Ka Gai, Tom Yum Koong, Khao Soi, Sing Tue, Khoa Dom Pla, Sim Gi Sam. Thai soups, with names so random, that not all those are actual Thai soup names. You would never know! Today I, Alan Vandegrift, will be taking over for Jon as he goes and personally apologizes to John Oliver.
Today we will be will be covering Thai Chicken Soup, or otherwise known as Tom Gi Sam.
Except it isn’t called that because I just made up that name as well! You would never Know!
But really, we are going to make Thai Chicken Soup. Thai Food and I do not have a very good track record. My curries come out way too thick, I can never find the right basil for basil chicken, don’t even talk to me about that Phad Thai I ounce attempted. So for this recipe I have recruited the help of my girlfriend Emily! Who knows how to make the one Thai recipe really delicious. So those feminine dainty hands you see in some pictures, not mine!
ON TO THE ACTUAL COOKING
For prep: thinly slice the onion into long strips, mince the garlic, cut the mushrooms, and make the bell peppers into your favorite bell pepper slice. Some like to make the bell peppers julienne style or ring style, C’est la vie. After prep, take a soup pot big enough to hold your whole soup (about 6 quarts) and pour some vegetable or olive oil into it and heat it up. Add the onion and cook until onion has softened.
We used mushrooms as well, but those are completely optional.
Add minced garlic and Thai curry paste to the Mix (my new EP album, coming soon!), stir for about 2 min and then add your chicken broth, coconut milk, and fish sauce.

Bring that baby to a boil
It has been pointed out to me that the above header makes it seem like a baby is one of the ingredients for the soup, even if it would be a nourishing and tender addition to the dish. Chef Swift has been a big proponent of this addition in his essays.

After the soup has boiled, add in the pepper and noodles and let simmer uncovered for about 3min. You may choose to boil the noodles in another pan to ensure the correct amount of noodles used. We have had several attempts when Emily was perfecting the recipe that the noodles swell up so much it made a slimly casserole. So be on the safe side with the noodles.
Add in the chicken which you have sliced very thinly beforehand and that sucker boil. After they have been cooked for 3 min, plate and serve. Use cilantro, Basil, and Lime Juice as garnish.
